Cooking vegetable stew with zucchini:

Step 1: clean the zucchini.

Before starting cooking, you need to thoroughly prepare all the vegetables, because the taste of the finished stew depends on their quality. Therefore, rinse the zucchini thoroughly under running water. Cut off the place where the stalk was. Peel the hard peel of the vegetable with a special knife. Crumble clean zucchini in any way convenient for you. In my opinion, smaller pieces are suitable for this dish than large ones.

Step 2: prepare bell peppers.

Rinse the bell peppers as well, then remove the core along with the seeds and tail. Rinse vegetables from the inside to get rid of seeds adhering to the walls. Peppers thus cleaned, cut into small cubes or thin strips.

Step 3: peel the carrots.

Step 6: prepare vegetable stew with zucchini.

We turn to cooking the vegetable stew itself. To start, fry the onion slices in oil heated in a pan. Fry it until transparent, then add carrots and stew more 7-10 minutes.

To the fried onions and carrots add bell pepper, as well as zucchini. Do not forget to salt and pepper to taste. Stir everything thoroughly and stew vegetables 15 minutes over medium or low heat.

After the required time has passed, add chopped tomatoes to the almost ready-made vegetables and continue cooking, stirring constantly, still 2-3 minutes. Then mix boiled purified water and a few tablespoons of tomato paste in a glass, stir the mixture until it is completely dissolved, and then pour the resulting liquid into a pan to vegetables. Add heat and cook until all liquid has evaporated, i.e. 5-7 minutes. At the end of cooking, be sure to check if there are enough spices and salt, if necessary, add more, if everything is in order, then boldly proceed to serve.

Step 7: serve vegetable stew with zucchini.

Serve vegetable stew with zucchini hot immediately after cooking. Offer a couple of slices of fragrant black bread to the finished dish. Stew can also be served as a side dish for meat, fish or poultry dishes; vegetable stew itself is very versatile and emphasizes the taste of almost any hot dish. - In order to make this dish more nutritious, at the end of cooking just break a couple of chicken eggs into it and mix, so you get an interesting taste, and your stew becomes even more nutritious.
